Menthol activates the “cold” receptors especially in our mouths, and especially with liquids / water. And cold water is associated with freshness / spring water / running water, as opposed to warm stale water (which has a higher chance of having bacteria in it).

I actually don’t know but there has been research done that suggests that menthol can improve athletic performance if ingested at a late stage in endurence. Apparently it had no physical effect, but mentally the test subjects felt stronger and could push themselves a little further. Note that these were elite sports people.
