If you’re in a moving car and look straight ahead (in the direction the car is traveling), it doesn’t look like the car is moving very fast compared to if you look out a side window (perpendicular to the direction of travel).
In the car analogy, increasing your FOV exposes more of the area to the sides of the car to your eyes. So a higher fraction of the things in your line of sight look like they’re moving faster. This same idea holds in games.
