To me it seems like hair strands always form in the same pattern and I’m wondering, how can hair form the same strands from the same hairs so reliably?

Like the shape?

I’m no expert, but iirc Your hair has it’s particular shape (curly, straight, somewhere in the middle) based on the shape of the follicle. So if your follicle is more circular then the hair will tend to grow straight, while follicles that have a bit more of an elliptical shape will cause you to have hair that is more curly.
