There’s a thing, called surface tension. With that you can carefully overfill a glass with water. Even when the glass is full you can add water and it bends above. The water molecules at the surface are a bit like velcro. The smaller the opening is the higher the effect. Your ear is a small tube like a blind alley. The water builds a dense surface like a cork in a wine bottle. If you can touch that surface with a finger the water runs out of your ear.
