Why does seeing someone enjoying an activity entice us to also do said activity?

Mirror neurons. Your brain scans for group behavior that is successful. And laughter can very well be categorized as successful. It in a way motivated us to do the same thing, strengthening our position in a group.
Humanity is pretty basic from an evolutionary standpoint if you think about it
