Your body makes special fluids to protect your internal parts like the throat and intestines. These fluids are mostly water, but they also contain molecules that make things slippery and smooth, which makes it easier for you to swallow food and makes it comfortable for these tissues to touch all the time. When you drink a lot of water, it can (temporarily!) wash these molecules away, which gives you the dry sensation. Drinking water over longer periods of time can prevent this feeling, and is easier for your body to absorb to keep you actually hydrated.
