Cuts bleed, the blood coagulates (hardens) in order to form a protective cover over the wound, to prevent contamination from getting into your blood stream, and also so that skin cells can multiply and re-form your skin underneath the scab.

The black results from the red hemoglobin cells degrading / drying up in place.
