Because the body needs to produce saliva before eating food rather than after or during, so the expectation of food arriving initiates the production of saliva.

Saliva starts the digestion process, so when we think about food the body starts to produce it in anticipation of eating. As this an autonomic response, separate from the ‘higher’ functions like imagination, this happens even when you’re not actually about to eat.
