If I’m remembering correctly, water is fairly adhesive (Sticks to things) but not really cohesive (Doesn’t stick to itself). So when we get clammy, the sweat makes us stick to surfaces more.

According to another comment somewhere explaining why we get clammy to begin with, it was apparently to help us stick to things as we climbed in the early early days of humanity.
