Basically because humans shed skin.

You get a tan because UV light from the sun activates melanocytes, cells in the basal layer of your skin. These cells have a certain base level of production which is why skin isn’t completely white. But in response to increased UV light, these melanocytes temporarily start to produce more melanin which dyes your skin darker. Over time as new skin cells grow the melanin is carried to the surface and goes away.

You get a tan when the sun damages your skin and that damage stimulates cells called melanocytes to make melanin which makes your skin darker and therefore less likely to get damage from the sun. Once you are no longer in the sun and having your melanocytes stimulated they stop making melanin and your tan fades away. Pretty much your body stops producing melanin because its wasteful and you only need it part time.
