An LCD works by filtering an always-on backlight to different colours or trying to block it out, which it never quite fully manages.

A normal night mode might just use darker colours to give an overall pleasing effect, but darker than normal knowing it can never achieve full black, and trying to ask for full black from an LCD will just end up losing detail in darker areas, because the backlight can only go so dark. Therefore dark mode on an LCD is in terms of the actual colours they’re trying to go to, a little lighter.

With AMOLEDs they can turn pixels completely off to give actual black, so with that in mind, the dark mode can be designed to make the most of the fact black will actually be black to give you a night mode display that looks as good as it can, with the added bonus of pixels being off contributing to a power saving.

Night mode give a the illusion of black on LCD displays. Amoled it true black (#0000000 or whatever the hex code for real black is) so the pixels turn off for a deeper black.
