What happens to wasps during a cold winter?

whenever I see a wasp nest during (Canada) Winter, wasps nests get destroyed but then in may, they just appear out of nowhere?

Mated queens hibernate during the winter while the rest of the colony dies. Those that manage to survive to spring build a nest, lay their eggs, and start a new colony.

Depending on your local species; look for little golf ball sized mini nests which the new queens live in over winter. Often found under the eaves and in attics.
