What happens in the pot when cheese gets hot and it sticks like crazy?
What chemical reaction happens here?

Well the pot is probably not 100% flat. As in all atoms are in line. And when the cheese melts, these small atoms fill these small uneven spots which makes it stick. Due to there being billions and billions of little spaces (probably), it lets it stick pretty strong to it.
