Your neck joint has synovial fluid in it that lubricates the joint. This fluid has gasses in it (oxygen, nitrogen etc.) When the joint is stretched (ie. your neck) the area which the fluid takes and the force on the fluid changes. This leads to the nitrogen gas bubbling out of the fluid phase, leading to the pop (ie. like bubble wrap).

I’ve had this experience before as well my neck will be leaned back and then I look up and it’s as if I got shocked by lightning and then a super hot painful burning sensation it’s happened to me twice and I’ve been super careful when stretching my neck does anyone know what this is like some nerve being pinched or something?
