What causes the saturated light ridge that sepates shade and light in some objects?

I’ve noticed some artpieces or pictures with this feature whenever light hits partially from a side or up/down and not frontally. Sometimes it’s like orange-ish whenever the object is white and the light is roundish or whatever other color depending the base object’s tone.
What is the cause of that saturated light ridge that separates light and shade?
