There’s an in-line heating element that quickly heats the water as it passes. Water heats quickly in small amounts, even if it starts out very cold.This is what most home coffee machines do, too.

Much like your home, there is a secondary tank which is heated by a heating element and that is where the hot water comes from. It isn’t heated that quickly, it is from a different reservoir.
