The body doesn’t need to separate it. The gas in the carbonated beverage is dissolved in water under very high pressure. Once the bottle cap is open and you start drinking it, this pressure is rapidly decreased so the gas is free to be released back into the air.

Adding to other answers, your body heat and the fact that the liquid gets agitated as you swallow it encourages more gas to come out of the solution.

The body doesn’t do it. The beverage does it itself. Swallowing a mouthful of soda is about as violent of an act as pouring it into a glass or giving the bottle a slight shake – some gas will get freed from the solution almost immediately.
