Soap molecules in the water have two ends, a water loving head and a fat loving tail. The tail is able to slip into dirt and grease spots, whereas the heads can remain ‘dissolved’ in the solution. This means that tiny particles of dirt and grease are more easily able to get into the water, with the aid of mechanical scrubbing, and stay as an emulsion.
