How does my smartwatch monitor my sleep and know when I am in REM sleep, deep sleep, light sleep etc?

The watch doesn’t actually measure your sleep. To accurately measure your sleep it would need to be attached to your brain using an electroecephelograph. Which it clear do not have.

What it does measure is your heart rate (if equipped with one) and your movements. While we sleep we tend towards being stationary but not all the time.

In light sleep we tend to move a little but our heart rate is slow.

In deeper sleep our movement is less and are heart rate is slow.

When we dream, our hearts rate goes up but we are stationary.

With those measurements and an algorithm the watch estimated your sleep.
