Wine, especially red wine, has large amounts of tannic acids. Tannins from tannic acids bind with proteins in your mouth and saliva; this causes these proteins to stick together, producing a rough and dry feeling.

This is why wines are often paired with cheeses – tannins also bind to fat, so the fat from foods like cheese will bind instead of the proteins in your saliva.

It’s called dry because of the sugar content is low on the Brix scale, to bring the sweetness back up they add wine conditioner
