The nutrients from plant and animal matter isn’t easily absorbed and distributed into your body immediately after harvesting. So, through processes like chewing (which breaks down the matter into smaller pieces and increases surface area), chemically dissolving in your stomach, and in some cases fermentation by gut bacteria, the plant and animal matter are converted to a form that can be easily absorbed through your intestines into your blood stream. Whatever’s left gets pooped out.

(There are external processes such as cutting, cooking, soaking, and fermenting that perform some of these functions outside of the body.)
