How does a French Press work? What are the mechanism behind it? Mainly, how does it stop the water from contacting the coffee once it’s pressed down.

It doesn’t entirely stop coffee from contacting the water but it stops enough of the water so it doesnt mix as much anymore. It does this by using a thin mesh filter.

It’s just a sieve with very, very tiny holes. The water (now coffee) passes through the holes and the relatively large clumps of ground coffee is pushed to the bottom.
