How do the websites that show “real-time” data work?

This question came to mind when I went to a website that shows you the current population of any place or the world and the number is constantly changing (obviously) but can this information be trusted? How does it work, is it a formula or are they actually somehow getting data from different nations and adding whenever a baby is born and subtracting whenever someone dies?

It’s all based on averages. 385,000 people are born per day, and websites will just average that out and add 4.45 births per second.
