As they age, the stiff insides start to weaken and break down, which makes the fruit softer. This breakdown is a chemical reaction that turns the starch, which causes the stiffness, into fructose, which makes it sweet.

Proteins break down into sugar. Ripening is very akin to rotting, it’s just a matter of timing. Too ripe we call rotten. Not far enough into the process of breaking down we call it unripe.
