Different feed combinations for said animals.
The amount of rennet if any is used, and what animal that rennet is sourced from.
The amount and kinds of bacteria or fungi used if any are used.
The duration, air temp, humidity level, and other factors of the aging process such as use of wax, or submerging in wine if it is aged at all.
The use of various herbs, spices, and other flavoring agents if they are used at all.
