They do not. Bionic arms are (for now) the realm of science fiction. Prosthetic arms sometimes have the ability to grip using specific movements, but we’re a long way off from bionics.
Bionic prosthesis is too wide of a field, you cannot adequately describe how they work as there’s too many designs and proofs of concept.
Most of the concept designs work on reading and mapping either remnants of bio electric feedback from nerves (pending the tester still has them) or detecting a specific brain pattern.
The tech we have now pales in comparison of what’s shown in contemporary scifi where they are depicted as being as close to real limbs as real limbs.
