Lots of different accounts, artifacts, and buildings remain from “the dark ages”. Historians go over all of this and come to a conclusion about things that have taken place. Just because Rome wasn’t in power doesn’t mean that Europe was a complete shitstorm. Mass manipulation was not really feasible at the time, since there was no large central government over the whole of Europe. If anything, it might be more reasonable to ask why we believe anything written by the romans, since they had the power to manipulate records across Europe.

Everything is still manipulated.

But a lot of different people write about things from their own perspectives, and we can be reasonably sure the truth about contested events or ideas. Plus, daily life wasn’t really that important (just like today), so we can be pretty sure that those texts are going to be more-or-less accurate.

And then the major events that shaped history have to have been correct, or things would be different today. If the Lancastrians hadn’t beaten York in the War of the Roses, we probably wouldn’t have had Elizabeth I.
