Your immune system is one of the most complicated things in the known universe. With complexity comes flaws, especially in a system designed by blind, random experimentation of nature.

If you have an allergy, your immune system senses benign proteins from peanut, pollen, fish, egg etc etc as being a harmful invader. It tries to stop the spread and kill it by flooding the area with fluids and white blood cells. If the allergy is severe, the system goes into a feedback loop where that inflammatory response just never stops without outside intervention.

Your body is doing everything it can to protect you, but doesn’t have the ability to know that it is killing you.

It’s an immune system overreaction. This doesn’t just happen with allergens. It can happen with viruses, too. This is one way that the 1918 flu killed people, and it is one way that Covid kills people.
