Redness in your eyes is a sign of dehydration, or dry eye. Eyedrops lubricate your eyes with oils and polyethylene glycol which replenishes the amount of hydration your eyes are lacking thus your eye becomes less irritated and less red.

Redness can be explained by the engorgement/dilation of blood vessels. This is caused by histamines, a type of hormone. Eyedrops counteract this response using antihistamines, which have a similar shape and block out histamine receptors on cells, preventing the histamines from actually working. In turn, the blood vessels return to normal size, and the redness disappears.
