If you are cooking rice IN coal you are probably going to get heavy metal poisoning or worse, please do not cook rice in coal, if you mean charcoal it’s because of the smoke probably, as it can be made of many different things. Smoke is composed primarily of carbon dioxide, water vapor, carbon monoxide, particulate matter, hydrocarbons and other organic chemicals, nitrogen oxides, trace minerals and several thousand other compounds. It could be one of those things that is coating the rice.
