Eli5: Why are some foods acquired tastes?

Your tastebuds change over time as you age. Also, foods that fall in the “acquired tastes” category are usually foods with multiple elemental layers that must be peeled back and explored. These layers can be texture, nose, tongue pallet position, or combination of. Most of us go through this process with alcohol. Doesn’t taste like much the first time around, but you’ll come to appreciate the different flavours and subtle notes that hides behind the bitterness. Where together is hard to find someplace else.

Because mum doesn’t know how to cook it properly. Just Kidding.
But that is also an aspect. I’ve made many people fall in love with mushrooms but they hated it as children. It’s mostly to do with the cook’s skill. Other than that, some things like stinky tofu, seafood etc truly are acquired tastes. They have a “revolting” stench but if you eat them cooked well enough number of times while hungry, it’ll just click.
