Think about looking down into a box with a light in it. Now move around and notice how much light and how much shadow you see will change as you move. Change the shape of the box and do the whole thing again. Now put a lot of boxes like that together in a group.
Your eyes determine color by how many photons of each frequency hit your cone cells. Change the angle you change how many hit your cones just like with the box. Wider viewing angles needs smaller boxes and bulbs with a wider field of lumination.
