Do plants and fruits of the same variety have opposing seasonality south of the equator? How come mangoes are only tasty during the northern hemisphere summer?

As long as you are far north/south, then yes. Plant growth is synchronized by the sunlight and warmth. Many go dormant in the cold and low light period.

Near the equator, the seasons and climate are not well differentiated through the year.

Yes. Plants rely on day length and temperature patterns to determine what season it is. If you plant them in Argentina, they’ll ripen six months off from the same plant in Germany.

That doesn’t mean you’ll always have the same success in the Southern Hemisphere though. There’s much less landmass south of the equator and much of it has its own unique climate that’s different than the massive continental expanses of North America and Eurasia.
