After accidently biting my lip, why does the wound taste slightly different even though it’s not bleeding?

Even if it’s not bleeding the tissue underneath the skin is still exposed and in contact with your tongue

You may be tasting your interstitial fluid, the fluid that exists around and in between your cells throughout your body. It filters out of the tiny holes in your capillaries and caries nutrients and oxygen to your cells, then slowly drains back into capillaries and lymph vessels on its way back to the heart. This fluid is rich in potassium and that may be what you are tasting.
